Man Oh Man, this gnocchi was so much more and then some. It was crazy good. I used potato and butternut squash. I had a butternut squash, and not enough potatoes. I have made just butternut gnocchi, but I liked this one better.  I can't really get down the " off the fo...

To me a good bean is hard to come by. I want a bean that is turned into something creamy and tasty, and just made for a burrito. Made r...

Hibiscus tea, Watermelon and Pineapple Popsicles

I was inspired by this beautiful Costa Rica sunset. Plus I love Popsicles, sometimes when it's rea...

Seasoned chicken, tequila, flour tortillas.  All rolled up and fried. Oh my!

I love to make these to take to a party, and yesterday was that day. A friend of ours was having a 50's 60's pool party. Don't worry I will not be putting on my suit and jumping in with...

This cake turned out so much butter then I thought it would, and I thought it looked very good. I used Black Plums, I think. Hard to tell here in Costa Rica. You cook the plum halves in Brandy and Jam, just until they are a bit soft. I used cranberry, blueberry jam. Th...

This salad is so refreshing and good. I had to grill my corn, our corn here in Costa Rica is sometimes, well hard. I did cut it off the cob. It's crunchy and fresh and so easy to make.

I didn't eat the whole corn with it. I just liked how this picture looks.

No cooking today. Just enjoying the beauty of the jungle and ocean. The jungle and the ocean change everyday. Today at the beach I noticed the sand change. To the untrained eye, one might not notice these things. But being a sand connoisseur that I am, the change is...

Grandma Marie's sauce, well I use it for lots of things. Spaghetti, Eggplant Parmesan, Pizza, Meatball Sandwiches and good old Spaghetti and Meatballs. It's a  quick and easy weeknight meal, if you already have some meatballs and sauce in the freezer. Add a salad and...

I do crave rice pudding. It's got all the stuff I love. Carbs, fruit, butter and a little bit of protein. I know, it's like the food you would eat in front of a roaring fire, on a cold and windy day. Here I sit, out side on a 85 degree day with almost the same huminity...

I really loved the way this bread turned out. I put mine on a small cookie sheet to cook it. The recipe said to put in a 10 in. bread loaf pan. I thought it was way to nice looking to squish in the pan. I twisted the two pieces together. So here it is, in all it's spre...

I'm jumping in. I'm not your mother's blogger, oh wait I am. So I thought at 67 I know a little about cooking and baking. I am ready to share my sweet life here in the jungle of Costa Rica. My home away from home. My outside cooking area, eating area, living area. The "rancho" as it's called here in Costa Rica. I live here with my surfer husband of 44 years. We are retired  from California, born and raised.  I cook quite often. If I get bored, I bake and then try to give my goods away. I also sell baked goods to some cafes and folks around here. We really don't need to eat all that sugar.

I learned to cook from my husband's Grandma, Marie, who was from Italy. So of course I love to make Italian food and we love Mexican food also. But I will try to cook anything.  Everything I make has a piece of Grandma Marie in it.  More about her later.
