My Mom used to buy a box of Date Bars and make them for us as children I always did love them, she was never a " from scratch" kinda Mom oh no she was so much more than just that. Not to say from scratch is bad because that is what I am about. But I did love those Date...

This sounded strange and so I had to try it with my simple chile and a variation on Paula Deens Waffle which would be good with just syrup or butter and honey, add jalapeños to the waffles too for extra kick just chop them up fine. I used jack cheese on top. I am still...

My taste tester Alejandro said  these are so good and I have to agree even two days later they were great with dinner and perfect with breakfast. Oh and smell well you will just have to try them out and see or smell for yourself.

Makes 12 if you squeeze them in

Sometimes I just want a small Quiche because Chuck and I don't ever finish the whole 9" Quiche. So I made this smaller version with roasted leftover potatoes, mushrooms a little onion, parsley, basil and pepper jack cheese all in a my famous jalapeño crust. Usually whe...

Move over cheese it's this is a homemade version, flakey, buttery, cheesy and with a little puff. Different of course and so good with your cocktail or just for snaking. I am taking them down to the beach this evening so we can all snack on them and watch the sunset. R...

My new favorite  homemade salsa. You throw it all in the food processor or blender and zappo you have salsa ready. Tonight I will be using this salsa to lay my Chili Rellenos on. Yesterday I made this same recipe and Chuck and I ate it all up with some chips for dinner...

There is a new little fish store in town and we went for a visit yesterday and brought home 2 pan size Red Snappers for dinner. They were very fresh. We first went to the vegetable farm to get some micro greens and arugula for salad, I know this sounds like any awesome...

I made these for a two year olds Birthday party and this is my kind of cookie, buttery sugar cookie at it's best. And it really did taste even better the next day. I love that they sorta look like a sand dollar or a flower. It really doesn't matter much when you put on...

I'm jumping in. I'm not your mother's blogger, oh wait I am. So I thought at 67 I know a little about cooking and baking. I am ready to share my sweet life here in the jungle of Costa Rica. My home away from home. My outside cooking area, eating area, living area. The "rancho" as it's called here in Costa Rica. I live here with my surfer husband of 44 years. We are retired  from California, born and raised.  I cook quite often. If I get bored, I bake and then try to give my goods away. I also sell baked goods to some cafes and folks around here. We really don't need to eat all that sugar.

I learned to cook from my husband's Grandma, Marie, who was from Italy. So of course I love to make Italian food and we love Mexican food also. But I will try to cook anything.  Everything I make has a piece of Grandma Marie in it.  More about her later.
