Visiting family in California for the Holidays is always a world wind of visiting family cooking and baking and just hanging out. I have been baking up batch after batch of different things for Christmas Eve and Christmas Day. My Mother in Law said I was in charge of d...

I had a big problem as this does happen in the Jungle now and then. The electricity goes on and off on some days and today was a very windy day. I should have paid attention to the wind. But I didn't and I put this lemon scented cake into the oven and set the timer to...

I made this small batch of cookies for a friend and I loved them for their small and tasty bites and I really didn't want any leftovers.

  • 1-1/3 cups sweetened shredded coconut

  • 1/3 cup sugar

  • 2 tablespoons all-purpose flour

  • 1/8 teaspoon salt

I have used this cake for Coffee Cake with Cinnamon, Brown Sugar and nuts on top, Cherries and sometimes Chocolate Chips, and now Apples and Almonds.

It's an easy never fail Cake with Sour Cream and eggs and it always holds up to whatever I put on top or in it. It's ric...

Lets make this one easy. Start with a good ol can of already spiced pumpkin the small one will do. Buy some already made crust and cut out your circles with a cookie cutter or a glass use about a 3...

I made these for a two year olds Birthday party and this is my kind of cookie, buttery sugar cookie at it's best. And it really did taste even better the next day. I love that they sorta look like a sand dollar or a flower. It really doesn't matter much when you put on...

I was wondering what I could do with this chocolate pudding mix I had, I bought it for some other recipe and never used it. So I began to look around and there is all kinds of cookies that use pudding. Who knew, everyone but me I guess. So here is my version, most of t...

Two layers, one is a rich brownie and then on top is the Salted Macadamia nuts, butter and brown sugar.

It's rich and chocolaty and then salty to boot.

My friend Jana that lives in Maui came to visit here in Costa Rica and she brought me 2lbs of  Salted...

This comes together so easy really. I know it looks hard but the dough is easy to work with and as you can see I am not good at cutting it even and it still came out looking pretty. But the flavor is outstanding, it's a yeasted  sweet dough and it's so hard to stop ea...

I found this recipe form an old Sunset cookbook, it's called All time favorite recipes and I have used this so many times.

Most everything I have tried comes out great. First time for these little cuties, the swirl of chocolate is so good with

the peanut butter. I...

ABOUT ME

I'm jumping in. I'm not your mother's blogger, oh wait I am. So I thought at 67 I know a little about cooking and baking. I am ready to share my sweet life here in the jungle of Costa Rica. My home away from home. My outside cooking area, eating area, living area. The "rancho" as it's called here in Costa Rica. I live here with my surfer husband of 44 years. We are retired  from California, born and raised.  I cook quite often. If I get bored, I bake and then try to give my goods away. I also sell baked goods to some cafes and folks around here. We really don't need to eat all that sugar.

I learned to cook from my husband's Grandma, Marie, who was from Italy. So of course I love to make Italian food and we love Mexican food also. But I will try to cook anything.  Everything I make has a piece of Grandma Marie in it.  More about her later.
