I love these Corn Fritters you can add what you like, for me it's jalapeño sometimes a little onion or cilantro, anyway you make them they are so good and I love them with an arugula salad. You can dip them in Aioli Mayo or Cilantro Sauce. We used both.

 Easy to ma...

I haven't made Lasagna in a long time, so when a friend here in the jungle asked " hey when can I come over to dinner" I said what do you want? Funny usually most people don't invite themselves over for dinner but she did and I really like her so I said, and what do yo...

This Chicken Tortilla soup is delicious. It can be all vegetarian or not. I make it this way so I can leave off the Chicken and Chuck can add it on, all he wants. A squeeze of lemon or lime at the end is just perfect. Of course I have to make the fried tortilla s...

We just got back home to Costa Rica after a really fun road trip to see family and friends. First off family and a new baby girl to add to the mix. A wedding for my great niece and helping our oldest son build a fence and gate. Well, Chuck helped the most, but I did he...

For me this is an easy dish to put together for a potluck. For you it will be even easier because you can get a rotisserie chicken at the market and shred it up and tuck some inside a flour tortilla and fry to golden brown and dip into guacamole or like here cilantro...

Here I go again trying new ways to use my Sourdough Starter and here it is. Quiche in a tart pan. It's cheesy and it has onions, mushrooms and thyme, parmesan is in the crust along with the sourdough. I added Arugula on the top and a few chili flakes for the win. So fa...

I really loved this loaf made in my Carbon Steel Pan, it was the perfect bread for dipping in Spicy Olive Oil that a friend brought to me from Northern California and I topped it with some "everything but the bagel" spices that my son brought to me at the same time fro...

This bread is not gorgeous and not so holy, but it's easy and it's sourdough and you can have a wonderful sandwich by lunch time if you start early, well not to early. It's a King Author flour recipe and I didn't change a thing I am just here to tell you to try it. Thi...

Ok so the Rolls take time but most of it is for the dough to just sit and rise and you can do whatever you like while they rise and at the last minute you can through the ground beef in the oven to cook while you pack up to head to the beach or kitchen table. The kids...

This is a simple and fast Fettuccine for anytime, Dinner or Lunch. There is no cream in this one so it really is on the lighter side if you don't look at the butter and that's good because I could not stop eating it, and I just had the leftovers for lunch. You can doub...

I'm jumping in. I'm not your mother's blogger, oh wait I am. So I thought at 67 I know a little about cooking and baking. I am ready to share my sweet life here in the jungle of Costa Rica. My home away from home. My outside cooking area, eating area, living area. The "rancho" as it's called here in Costa Rica. I live here with my surfer husband of 44 years. We are retired  from California, born and raised.  I cook quite often. If I get bored, I bake and then try to give my goods away. I also sell baked goods to some cafes and folks around here. We really don't need to eat all that sugar.

I learned to cook from my husband's Grandma, Marie, who was from Italy. So of course I love to make Italian food and we love Mexican food also. But I will try to cook anything.  Everything I make has a piece of Grandma Marie in it.  More about her later.
