I love these Corn Fritters you can add what you like, for me it's jalapeño sometimes a little onion or cilantro, anyway you make them they are so good and I love them with an arugula salad. You can dip them in Aioli Mayo or Cilantro Sauce. We used both.

 Easy to ma...

Usually when you buy Flautas at a Mexican Restaurant they are filled with pork and that is just the way Chuck likes them, me on the other hand loves them filled with Potatoes and I do love them seasoned so this recipe is so easy. I used Lipton Onion Soup Mix and roaste...

I haven't used this 11 inch pan before today for a Quiche and I think it worked out better than my pie pan. This is what I will use from now on, it makes a thin quiche and that is the way I like it. And I think the crust tastes better too. Well, it could be all the jal...

This Chicken Tortilla soup is delicious. It can be all vegetarian or not. I make it this way so I can leave off the Chicken and Chuck can add it on, all he wants. A squeeze of lemon or lime at the end is just perfect. Of course I have to make the fried tortilla s...

We just got back home to Costa Rica after a really fun road trip to see family and friends. First off family and a new baby girl to add to the mix. A wedding for my great niece and helping our oldest son build a fence and gate. Well, Chuck helped the most, but I did he...

For me this is an easy dish to put together for a potluck. For you it will be even easier because you can get a rotisserie chicken at the market and shred it up and tuck some inside a flour tortilla and fry to golden brown and dip into guacamole or like here cilantro...

Here I go again trying new ways to use my Sourdough Starter and here it is. Quiche in a tart pan. It's cheesy and it has onions, mushrooms and thyme, parmesan is in the crust along with the sourdough. I added Arugula on the top and a few chili flakes for the win. So fa...

This soup is the kind of soup for me that I just add what I like and still keep with the Minestrone Soup theme.

I start off with olive oil and onion, garlic, carrots, celery. When I am finished it's the Pesto on top that makes this soup

for Chuck and...

I do love beans, mostly Pintos to go with good Mexican food but alas I use Red Beans here in Costa Rica and I use them the same way I would use Pintos. I make mine spicy that's the way we like them, you could use less of everything if you like, but come on add a little...

I had all this in the fridge so I thought dip. I had just bought a baguette and I thought crostini with this dip on top for lunch, Chuck suggested adding some lemon after he did his taste test and sure enough that was exactly what it needed. He also wanted me add a jal...

I'm jumping in. I'm not your mother's blogger, oh wait I am. So I thought at 67 I know a little about cooking and baking. I am ready to share my sweet life here in the jungle of Costa Rica. My home away from home. My outside cooking area, eating area, living area. The "rancho" as it's called here in Costa Rica. I live here with my surfer husband of 44 years. We are retired  from California, born and raised.  I cook quite often. If I get bored, I bake and then try to give my goods away. I also sell baked goods to some cafes and folks around here. We really don't need to eat all that sugar.

I learned to cook from my husband's Grandma, Marie, who was from Italy. So of course I love to make Italian food and we love Mexican food also. But I will try to cook anything.  Everything I make has a piece of Grandma Marie in it.  More about her later.
