Cheating Chilaquiles

My dear friend Shirley Gonzalez shared this recipe with me many years ago. She used to make this with her old corn tortillas saved from the the ones Jose didn't eat. And he can eat lots of corn tortillas. She would make her own sauce, this all takes time. She had a growing family of three daughters. So she did what all great cooks do at times, she used a short cut.
Shirley never called them Cheating Chilaquiles, I did. I do feel like I am cheating in a funny way. Check out the picture. These are so easy and really good to. I think Shirley said," the family never even noticed I used corn chips instead of corn tortillas fried, and a can or a bottle of salsa". How cool is that? This was our brunch today. Can you really call this brunch if I get hungry later on today before dinner?
The Cheating Chilaquiles
1/3 Cup chopped Onion
1 Tablespoon Olive Oil
2 handfuls corn chips
1 can green or red chile salsa
2 Tablespoons water
Saute the onion in the oil, add the corn chips and stir around for a minute or two. Add the salsa and the water, stir. Put a lid on it and cook for just a few minutes. Until the corn chips are soft. Take off the heat and keep the lid on for 5 minutes. Serve with a fried egg on top.
