Family Biscuits

I have made all kinds of Biscuits while living here in CR. This one, so far is the best for me. It doesn't get very tall here, but it will everywhere else. You can use butter milk or regular milk.

I found this recipe while tutoring a young Costa Rica boy in reading. So one day we were looking through one of his reading books. Not sure which one. But at the end of the book there was a few recipe's. I thought, why not teach him to read a recipe. So the next time he came over I had everything ready to cook Biscuits. He loved doing this. And you know, I loved it. The Biscuits came out great, and now this is my go to Biscuit recipe. The boy moved away, but I will always remember him whenever I look at this recipe. Hope he enjoys cooking and thinks of me when he eats biscuits.

2 cups flour

1 Tablespoon baking powder

1 teaspoon salt

1/3 cup shortening. ( I use butter and shortening ) 1/2 and 1/2.

3/4 milk or buttermilk

Heat oven to 425 degrees

Mix flour, baking powder and salt together in large bowl. Mix in shortening and butter with your fingers until it forms coarse crumbs.

Add milk and stir with a fork. Form dough into a ball and put on floured board. Folding it together 8 to 10 folds. You don't want to handle it to much. Roll dough out 1/2 inch thick. Cut with a 2 inch cookie cutter or a glass dipped into flour. Place on parchment paper lined cookie sheet. It makes about 8 or 9 biscuits. I had mine with jam and butter, Chuck had his with a fried egg.
