Italian Comfort

Italian Comfort

Hot Italian sausage, potatoes, bell pepper, and onions sautéed in olive oil and then I added wine. I put all this in the oven to roast for a bit and then placed it on top of a soft bed of polenta. Man was it good. For 2 people with leftovers for lunch tomorrow.

2 Italian sausage cut into 2in. slices. I used the hot type

2 Tablespoon Olive Oil

2 medium potatoes. Peeled and cut into large cubes

2 bell peppers ( 1 red and 1 green) sliced

1 large onion cut into wedges

3 cloves of garlic chopped

1/2 Cup wine ( I used red)

Instant Polenta

Add the 2 Tablespoons of Olive Oil into a large fry pan. Add the sausage and cook until browned. Take the sausage out of pan and put into a 8x8 in roasting pan. Now add the potatoes to the pan and brown for about 10 min. take out of pan and put into roasting pan with the potatoes. Add bell peppers and onion and garlic and cook until soft. Add all this to the pan with the sausage and potatoes and add the wine. Salt and pepper to your taste and roast in 400 degrees oven for 20-25 minutes.
