Sunday Cannelloni and a little sausage on the side

1 large bunch Spinach
2 Tablespoons Olive Oil
2 Cups of fresh Ricotta Cheese
2 Cloves of garlic
1/2 small onion chopped
1 Box or bag of Cannelloni
1 Egg
Salt and Pepper to your taste
1 teaspoon crushed red chili, or more like me
Less than 1/4 cup water
Parmesan Cheese to add on top
Pasta Sauce
Saute the spinach with the garlic and onion until soft, add the water and let simmer for 3 minutes. Drain and let cool, then squeeze out the moisture and chop.
Mix the ricotta cheese and the egg, salt and pepper together. Add the cooled and chopped spinach mixture in with the cheese. Set a side. Boil, or not your Cannelloni. Some do some don't. I will boil just until a little soft. Drain and fill. I used a baggie and cut off the corner and squeezed it into the Cannelloni. It sorta works, you have to push some of it in. Some of the Cannelloni split and they were the easest to fill. Lay them on a thin layer of the sauce. ( Grandma Marie's Sauce on my site). Add more sauce on top and grate some Parmesan Cheese over the top. Bake at 350 for 45 to 1 hour. I like mine crispy on top so went for the hour. Hope you like it. Deby
