Browned Butter, Sugar Cookies

Browned Butter Sugar Cookies

They taste like toffee, crispy on the outside and tender on the inside. One of my favorites. First you brown the butter to bring out a nutty flavor and smell. Just until the butter is golden brown. These cookies are not hard to make and browning the butter is fast. I know, an extra step, but so well worth it. Try em and see for yourself. I got this recipe form an old Cookis Illustrated Magazine.

14 Tablespoons unsalted butter thats 1 and 3/4 sticks

1/4 cup granulated sugar

2 Cups packed dark brown sugar

2 Cups + 2 Tablespoons all- purpose flour

1/2 teaspoon baking soda

1/4 teaspoon baking powder

1/2 teaspoon salt

1 large egg

1 large egg yolk

1 Tablespoon vanilla extract

Heat 10 Tablespoons butter in a 10-inch skillet over medium - high heat ( use a pan that is not nonstick) until melted, about 2 minutes. You can see the butter browning better in a stainless pan. Continue to cook, swirling pan constantly until butter is a dark golden brown and has a nutty smell, about 1-3 minutes. remove skillet from heat and transfer browned butter to a large heatproof bowl. Stir remaining 4 Tablespoons into hot butter to melt. Set aside for 15 minutes. Line 2 cookie sheets with parchment paper. In a shallow baking dish or pie plate mix 1/4 of packed brown sugar with the granulated sugar rubbing them together with your fingers. Set aside. Whisk flour, baking soda and baking powder together in a medium bowl set aside.

Add remaining 1 3/4 cups brown sugar and salt to bowl with cooled butter, mix until no sugar lumps remain, about 30 seconds. Add egg and egg yolk and vanilla and mix until fully Incorporated, about 30 seconds.

Add flour mixture and mix just until combined, about 1 minute.

Roll out 24 1" ball and roll in sugar mixture and lay on cookie sheet. I put 6 to cookies on my sheets.

Bake for 12 to 14 minutes or until crispy on the edges, and they have begun to set but centers are still soft. Cool cookies on cookie sheet for 5 minutes, transfer to wire rack to cool to room temp. if you are better than me and you can wait that long.
