Huevos Rancheros, easy like a Sunday Morning.


Huevos Rancheros
A fast sauce made from onion, garlic, tomato, jalapeño and a little tomato sauce. Fresh beans and fried tortillas and sunny side up or over easy egg, come together for a tasty and oh so filling meal. We usually have this for dinner.
The Sauce for 2 people
1 small onion chopped
2-3 cloves of garlic chopped
1 Jalapeño chopped
1 large tomato chopped
1/2 to 1 cup tomato sauce
Olive oil
salt to taste
Put 2 Tablespoons of Olive oil in a sauce pan and add everything but the tomato sauce. Sauté for a few minutes until all is soft. Then add the sauce and cook for about 20 minutes. Taste and see if you need salt. Blend if you like your sauce smooth. I wanted it chunky this time.
Oil for frying the tortillas I use about 1/2 in or so. Not much.
4 corn tortillas
2 eggs Fried
About 1 cup of smooth beans. Warmed up ( Blended, my recipe)
Avocado slices
Cilantro leaves
Cheese of your choice. I used pepper jack
Fry the tortillas one at a time just until starting to crisp, drain on paper towel.
Put some of the sauce on a plate, lay one tortilla on top of the sauce. Add beans to cover the tortilla, lay one more tortilla on top of the beans. Put more beans to cover and add some sauce. Lay a fried egg on top of that and add some cilantro leaves and avocado slices. Add a little sauce on top of it all, and add some grated cheese. Enjoy
