Funnel Cakes
Such a easy recipe to make, it's like pancake batter with more sugar. But not to sweet at all. The sweetness comes from the powdered sugar. Add berries if you like. I like mine without. Just a sprinkle of powdered sugar over the hot funnel cakes. Perfect in there simplicity with a good crunch. Just make it yourself, at home in your kitchen and it has to be good. Enjoy

3 cups flour
1/4 cup sugar
2 teaspoon baking powder
1/2 salt
3 eggs
2 cups milk
Powdered sugar to sprinkle on top
Oil
I used an electric skillet ( less mess on the stove) with about 1 inch of oil.
Mix flour, sugar, baking powder and salt. Whisk in eggs and milk. I used a small cup and filled the funnel with with the batter over the bowl and then quickly held it over the hot oil and used a slow circler motion around the oil. And then criss crossed the batter over the top to connect it all together. Brown just a little on one side and flip with tongs. Be careful. and cook until it's golden on both sides. Put on paper towel and sprinkle with the powdered sugar through a sieve on top. Eat right away. Enjoy.
