Manicotti for Mom

Made some Manicotti for my Mother, wait let me take a sip of this beer. She loved it! I used my sauce, but left out some of the heat and made the manicotti with ricotta and spinach. So good and comforting on a very rainy California day. Costa Rica here we come!



9x13 pan, spray with cooking spray
I fit 10 of the Manicotti noodles in the pan
2 cups Ricotta Cheese
1 bunch of spinach cooked and cut up small
salt and pepper
1 egg beaten
garlic powder, just a sprinkle
onion powder, just a sprinkle
Mozzarella Cheese
Parmesan Cheese
Mix together the cheese, spinach, salt and pepper, egg ,garlic powder and onion powder in a bowl. Cook the manicotti noodles until almost done, drain and when cool enough to handle stuff with the cheese mixture.
Put a small amount of sauce in the pan and lay the stuffed noodles on top and add more sauce over noodles. Grate mozzarella over all and then add some grated Parmesan cheese over top. Cook at 350 degrees for about 45 minutes or until all is bubbly and a bit golden. Enjoy
