Pecan, Almond Oatmeal Cookies

Attention please, this post might be more about the awesome platter my sister gave me than about the cookies, and the cookies are good.

This platter needs a taco next time.

These cookie are not to sweet, but they do hit your sweet tooth with enough sweetness to make you happy. I love the Pecans and Almonds. That's what I had on hand and so today it's Pecans and Almonds. I only had about 2 cups of Oats so this is the cookie that I came up with. Easy and delicious

1 stick unsalted butter, room temperature

1/3 Cup white sugar

2/3 Cup packed brown sugar

1 large egg

1teaspoon pure vanilla

1 Cup flour

1/4 teaspoon cinnamon

1/4 teaspoon baking powder

14 teaspoon baking soda

1/2 teaspoon salt

1 and 1/2 Cups oats

1/2 Cup chopped almonds

1/2 Cup chopped pecans

Preheat oven to 350 degrees

Cream the sugars and butter together until creamy. Mix in egg and vanilla.

Sift the flour, baking powder, baking soda, cinnamon and salt into the egg mixture. Add oats and nuts. Drop 1 Tablespoon of batter onto parchment lined cookie sheet. Bake for 14 min. or until just a little golden around edges. Enjoy

I made about 24 cookies.
