Fried Zucchini with dipping sauce
Fried Zucchini, it's the Bane of my Existence, I loved saying that, although I have never said it out loud or wrote it down before today. I had to look up" bane of my existence", it means something like Fried anything is really not so good for me anymore. But sometimes I just don't listen to myself and I go ahead and make something I know I will love for the moment. Yes, I live in the moment. And you can to by making these delicious Fried Zucchinis with the spicy mayo, sour cream and spices dipping sauce. I put pink Himalayan salt on some of them and Parmesan Cheese on the others. I know these look like Churros, but there not. Eat something green and enjoy it. Have I told you how much I love French Fries?

I used 1 medium Zucchini cut into 1/2 inch by 3 inch long pieces 1 1/2 Cup flour 1/2 teaspoon salt ½ teaspoon ground black pepper 1/2 tablespoon vegetable oil 2 egg yolks About 3/4 cup of beer, don't add it all, you can add as you go. Oil for frying

This recipe is adapted from the Brown Eyed Baker
Wisk together the flour, salt and pepper in medium bowl. In a separate small bowl beat the egg yolks and oil together. Drizzle the egg and oil mixture over the flour and mix together into a shaggy dough. Now pour in the beer while whisking it in. Should be a smooth batter, so add more beer if need be. Take a sip and add more. Put in fridge for at least 45 minutes.
Heat the oil in a small fry pan, I use a small fry pan because I can control the small amount of zucchini I am frying. Heat till very hot 375 degrees F. You can see I put in about 5 pieces at a time. So first dip in a little flour and then in the batter and right into the hot oil, be careful now. Brown on both sides and take out and put on paper towel and then put on salt or Parm.
Serve with spicy dipping sauce
1/2 Cup Salsa
1/2 Cup mayonnaise
1/2 Cup Sour Cream 1 teaspoon garlic powder 1/2 teaspoon salt 1/4 teaspoon cayenne pepper 1/4 teaspoon pepper Mix it all together and chill. Enjoy
