Blueberry and Banana Waffles

It's raining outside and it made me think of Waffles. Although it's 85 degrees out. So I broke out the 43 year old Waffle Iron. I can't believe it still works and it's now in the Jungle with us. I wish I knew who gave it to us for a wedding present. If it's you let me know. I want to thank you for such a long lasting gift. I remember the first time I used it, I don't think there was any cooking spray like Pam, so of course everything stuck to the waffle iron. Or I just didn't know there was a spray to put on before you put in the batter. I was only 20. I leaned over the decades. Now that sounds strange.. decades really. I asked Chuck to put butter on the waffles while I took pictures. I love the way he is holding the butter. Don't you? And aren't you glad you didn't stay for breakfast?

Banana Blueberry Waffles

The 43 year old Waffle Iron is still kicking

Chuck and the butter

1/3 Cup Blueberries

3 teaspoons baking powder

2 eggs separated

1 Tablespoon sugar

2 Cups flour

1 1/2 cups milk

1/2 teaspoon salt

1/4 cup melted butter

1 small smashed banana

  1. Preheat the waffle iron.

  2. Beat egg whites til stiff and set aside.

  3. Sift together dry ingredients.

  4. Slowly stir in milk, beaten egg yolks and melted butter.

  5. Fold in blueberries and banana

  6. Fold in egg whites which were stiffly beaten.

  7. Bake in hot waffle iron. Enjoy This recipe is adapted from food.com
