Baked Apples with Oats and Carmel Sauce
Sometimes it's wine and sometimes it's a Baked Apple half in my glass with the Carmel Sauce. Chuck put heavy cream on his and I put a whole lot of carmel sauce on mine. I love it with the oats, usually I put brown sugar, raisins and nuts in the middle. This just seemed so much more healthy. Right!! This carmel sauce is quick and easy and you will want to drink it. Save it to pour over vanilla ice cream. It's a small batch, so you will not have to eat to much of it.




I cut the recipe in half for my two apples, and still had plenty.

1 Cup brown sugar
1/2 Cup heavy whipping cream
4 Tablespoons butter
pinch of salt
1 teaspoon vanilla extract
In small sauce pan, mix together the brown sugar, heavy whipping cream, butter and salt, bring to a low boil. Reduce heat and let mixture simmer for 4 minutes, whisking all the time.
Remove the pan from the heat and add vanilla extract, it's hot so be careful. Let mixture cool if you can.
2 large Apples, use what you have. Although the green ones would be good with the sweet carmel sauce. I used red.
Core apple almost to the bottom of the apple. I made a large whole so I could put more oatmeal inside.
1/2 cup oats
2 Tablespoons of butter, more to put on top
1/2 teaspoon cimmamon
1/2 teaspoon vanilla extract
Mix all together and smash the butter into the oats
Fill the apples with this mixture and some may fall to the bottom of the pan. Great. Put a pat of butter on top of each apple.
Add a little water to the small pan and cook at 360 degrees for 35-45 minutes or until soft enough for you. You may have to add more water to the pan. So keep checking. Cut apples in half or eat whole with the carmel sauce poured over the top. Enjoy
