Deby Hogue
White Bread for my PBJ Foldover
I have been craving a good PBJ on white bread, so I made some bread. I am not big on the bread here in Costa Rica. So on the good side, we don't eat much bread, unless I make it. So now I have had the first piece with butter and then I proceeded to my fold over PBJ. As you can see. This was a very easy bread to make. Try it for some really good white bread sandwiches. Sometimes you just gotta have it.

This recipe is adapted from Food.com
3 1/2 cups all-purpose flour
2 teaspoons yeast
1 1/4 teaspoon salt
2 Tablespoons sugar
4 Tablespoons unsalted butter, softened
1 1/8 cup lukewarm mild ( 1 cup + 2 Tablespoons)
1 Combine all ingredients ( leave out 1/2 cup flour) and mix thoroughly in a large bowl
2 Add reserved flour a Tablespoon at a time to the mixture until a soft, smooth dough is formed
you may need more flour or less depending on the weather.
3 Just add enough flour until dough comes away form the bowl and it doesn't stick to you fingers to much.
4 Turn dough out onto a lightly floured surface and knead for about 10 min.
5 Place in large bowl and cover and let rise for 1 hour. Or, until puffy.
6 Transfer dough to a lightly oiled surface and using your hands pat out into a rectangle, roll up, and shape into a 8 in. log. Pinch along seam and place in a greased loaf pan, ( 8 1/2 x 4 1/2) I used cooking spray , seam side down.
7 Cover and let rest for 1 hour.
8 Preheat the oven to 350 degrees and bake for 35 - 45 minutes or until golden, remove from pan and let cool on wire rack. Enjoy your bread.
