Baby Zucchini with Eggs
One of Grandma Marie's recipes that has been passed down to Joann my Mother in Law and then to me. It's a quick and easy side dish, or sometimes for Chuck and I, we have it as a main dish with a salad and some good crusty bread. Funny thing is we never have it for breakfast even though there is eggs involved.



6 or 7 Baby Zucchinis sliced or more
Olive oil
Salt and Pepper
Chile Flacks
2 or 3 eggs, beaten
Sauté the Zucchinis in a small amount of olive oil. Just enough to cover the bottom of a pan. Cook until some of the zucchini are golden brown and a bit crisp. Add the beaten eggs and cook until done to your liking. Serve.
