Browned Butter Brown Sugar Cookies

Oh my! These are so addicting. Perfect for a lunch box for the kids and not to hard to make. The extra step of browning the butter is very easy.

The taste is like a toffee candy in a cookie form. A little nutty, and a little nice. Ok, a lot nice. Come on over if you want some I had to put them in the freezer so I would stop eating them. I used a stainless steel pan to brown the butter, that way you can see the color of the butter as it turns a little golden brown. In the nonstick pan it's hard to see this step. Other than that it is a very easy cookie to make and it's all about the taste. I do have a different Brown Butter Sugar Cookie on my blog but this one is easier to make I think. Hope you like them. Browned Butter Brown Sugar Cookie

Adapted form Sweet Peas Kitchen

14 Tablespoons unsalted butter

1 3/4 Cups packed brown sugar, plus 2 Tablespoons for the topping

2 Cups of flour

1/2 teaspoon baking soda

1/4 teaspoon baking powder

1/2 teaspoon salt

1 large egg plus 1 egg yolk

1 1/2 Tablespoons vanilla

2 Tablespoons granulated sugar I used icing sugar or large sugar

In a stainless steel pan ( you can see the butter browning better in this pan) over medium high heat, melt butter, keep swirling the pan until brown. The butter will have a nutty smell this takes about 4-5 minutes. Be careful not to burn.

Remove form the heat and pour into a large bowl and let cool for 15 minutes.

Preheat oven to 350 degrees and line a pan with parchment paper

In a medium bowl whisk together the flour, baking powder, baking soda and salt. Set aside

In a bowl beat together the browned butter and 1 3/4 cups of brown sugar until combined about 2 minutes.

Add egg, yolk and vanilla and mix until smooth about 30 seconds. Add half of the flour mixture and mix for 15 seconds and add remaining flour mixture and beat until just mixed.

Place the remaining 2 Tablespoons of brown sugar and 2 Tablespoons of sugar in a small bowl. Roll a ball about 1 Tablespoon, between your palms. I had to refrigerate my dough for a few minutes before I could continue. Roll in the sugars first and then place on baking sheets lined with parchment paper. Bake cookies in a 350 degree oven for 10 to 12 minutes. Let cool on sheet for a few minutes and then on a wire rack to cool completely. Enjoy!
