New Apps. Ricotta and Capers Stuffed Mushrooms and Cheese Roll ups.
Mushrooms stuffed with store bought or home made ricotta cheese. I added the capers for some salty flavor.


Cheese and Potato Roll Up
Really you can add what ever you like in the rolls, but I sure loved the potato with the cheese.



Potato and Cheese roll ups
2 large potatoes,
2 whole heads of garlic
3 1/2 cups all purpose flour, more for kneading
2 teaspoons salt
1/2 teaspoon yeast
2 cups of cheese, cheddar, pepper jack. Use what you like
Sesame Seeds for garnish, I used the black smoked bamboo seeds
Preheat oven to 450 degrees. Poke holes in potatoes and bake for 1 hour or until soft. Wrap the garlic heads in foil and bake with the potatoes, until soft. The garlic will be done in around 45 minutes.
When potatoes are cool enough to handle scoop out the flesh into a bowl. Squeeze the softened garlic cloves into the bowl with the potatoes and mash together.
Make the dough, combine the flour, salt and yeast in a large bowl and 1 1/2 cups lukewarm water. Mix with a fork and pour out onto floured surface and knead for 8 to 10 minutes. When smooth, leave in a oiled bowl in warm place to double in size, about 1 hour. Punch down dough and roll out to a rectangle.
Sprinkle the cheese, garlic and potato over the dough, and roll up and cut into 12 pieces.
Place into a square or round baking dish lined with parchment paper and put the rolls close together. Cover it up again and leave for another hour to rise then bake at 400 for around 35-40 minutes or until nice and golden. Adapted from Pinkpostitnotes.com
Stuffed Mushrooms
8 Mushroom or more
1 cup Ricotta Cheese
About 1 Tablespoon Capers
1 Tablespoon of Sour Cream
Pepper for taste
Mix everything but the capers together and stuff the mushrooms
Place a few Capers on each Mushroom
Bake in the oven at 350 degrees for 15 to 20 minutes or until golden brown
