Rice Pudding with Rum Soaked Dried Pineapple and Cranberries with Coconut Milk
On the sweeter side of things. Comfort in a pretty glass.
I was looking for something different this time. I had the dried fruit and the coconut milk so I though, that sounds good together. I didn't use a lot of sugar, less than most recipes because the dried fruit is sweet enough. Rum soaked made a difference too. You can drink the rum with the rice pudding that the fruit was soaking in if you want. Get out the pretty glasses! Sit back and relax and enjoy. I did.




Rice Pudding
3 1/2 cups of Cooked Rice
1 1/2 cups of Coconut Milk
1 1/2 cups of Milk
1/2 cup of Dried Fruit. I used Cranberries and Pineapple
Rum to cover the Dried Fruit
1/4 cup + 2 Tablespoons of Sugar
1 1/2 teaspoons of Vanilla
1 egg beaten
Cinnamon
Place the Dried Fruit in a small bowl and cover with Rum. Set aside. You will drain the Rum off before adding to Rice.
Put the cooked Rice in a sauce pan with the Coconut Milk and Milk turn the heat to medium low and stir in the Sugar and Beaten Egg.
Cook for about 15 to 20 minutes, add the Vanilla and Dried Fruit cook for about 5 more minutes, it will thicken when it's taken off the heat.
Remove from heat and spoon into wine glasses or whatever you like. Add Cinnamon on top. Eat warm or cold. Enjoy
