My Friendsgiving Dinner I am ready for Thanksgiving, and so is Otto. Now what?

So far I have lots of desserts from friends coming to dinner. Pumpkin Pie by me, Cranberry Cheese Cake by Laura, Apple Pie by a different Laura and a Key Lime Pie by Mari. So really we don't need a Turkey or all the other stuff that goes along with it right? You all know I am just kidding. We will be having the Turkey and all of the fixings of course. It's so nice to know that this far form home we all can pull together and make a beautiful dinner for each other. Makes me happy. Chuck and I will be having 20 people over for a Thanksgiving Dinner. Everyone brings something to the table to share with us all. It's not potluck it's more planned out, that way we don't end up with 5 Pumpkin Pies. This year we will be making 2 Turkeys so there will be enough for Turkey sandwiches for who ever wants to take some home. I would love to have even more people over for Dinner but we just don't have the room. It's hard to believe that we have made so many wonderful friends here in Costa Rica. Still living the dream. Wishing all my family and friends Happy Thanksgiving.

News flash, son my not make it here to Costa Rica, the 20 friends we have invited well I don't have anyplace to put them all if we have to go inside because Otto might just pass on through. We have planned on eating outside like always in the Rancho. Electricity might be out. This may be a very different kind of Thanksgiving then I expected. So just cope Deby. Ok I will just keep moving forward with the food. Making my stuffing today, cooking one of the 2 Turkeys today, washing my floors, making the Pumpkin Pie. I love a good storm just not tomorrow. I think we should all be thankful that we will have all this left over food to get us through the week if Otto hits us. Come on over for Pie.

Browned Butter and Rum Hand Pies

2 Green Apples, chopped into small pieces

3 Tablespoons Butter

1 Tablespoon Brown Sugar, or a little more

1 Tablespoon white Sugar, or a little more

1 Tablespoon Cinnamon

2 Tablespoons Rum, the good stuff or not.

1 egg for brushing on top of dough

Cinnamon and Sugar for sprinkling on tops

Brown the 3 Tablespoons of butter by just swirling the butter around in a pan until it's a golden brown.

Add the chopped Apples, Brown Sugar, White Sugar and Cinnamon to the butter in the pan.

Cook until the apples start to soften and most of the liquid is absorbed.

Add the Rum and cook just for a few minutes, I didn't let my apples get really soft. Set aside to cool.

Have your dough ready and chilled, cut in half

The Crust

1 1/2 cups of flour

1/2 teaspoon salt

1/2 cup cold unsalted butter

1/4 cup ice cold water

1 tablespoon sugar

Put flour, salt, sugar and butter in food processor and blend for 8 seconds

Add the water and pulse until it all starts to come together, not into a ball, Just before that.

Put dough in plastic wrap and chill for an hour or so.

Preheat oven to 400 degrees

Roll out your dough to about 10" X 12"

Use a 3" cookie cutter and cut out 9 or 10 rounds

Put a spoonful of the apples in the center

Cut out 9 or 10 more rounds and lay on top or the apples

Press edges, and then using a fork press all around edges

Brush tops with one egg beaten with just a little bit of water

Sprinkle with cinnamon and sugar

Bake for 20 or until golden brown.
