Deby Hogue
Easy Stuffed Bell Peppers and my review of my new Carbon Steel Pan.
The Bell Peppers here in the Jungle are just a bit different then I am used to, they don't stand up on their own. So I cut a sliver off the top and then stuff them and they lay on their side. It works just fine. Easy easy Roasted Potatoes on the side in the Carbon Steel Pan. Chuck's brother Steve is here with us in Costa Rica and he has been craving Stuffed Bell Peppers. I used my pasta sauce for the sauce, but you could use a jar sauce for a real quickie. So here I am cooking away. I did make some in California with Chuck's Mom but I didn't take pictures of the finished dish. Sometimes I am in a hurry. Now I have a new iPhone ( my first) and I will be using it for pictures of my food, so I guess I'll be reviewing the new iPhone also. (Like no one has done that before.) But I'll be telling you how a 64 year old likes it. So far I noticed while I was waiting to be helped at the Apple Store, all the older folks like me went straight for the big 7+ phone just like me. I guess we think we can see it better, It's big!!

Meat and Potatoes, my man food

The brothers Hogue

My sauce bubbling away with the Italian susauge

Chuck copped the onion, big.

The pan, I ended up loving it so far

The best compliment I could possibly get, an empty plate with just the garlic skin left.
I loved the carbon steel pan nothing stuck to it at all. Easy clean up too.
How to make the sauce:
Ingredients
1 Medium Onion (Chopped)
4 Garlic Cloves or more (Minced)
1-2 teaspoons Red Chili Seeds
3-15oz cans Tomato Sauce
1 Can Tomato Paste
1 Can Cubed Tomatoes
Salt to taste
Olive Oil
2- Italian Sausage ( optional ) I like to use the hot Sausage
Making the sauce
Pour a Tablespoon or so of the Olive Oil into large pan and saute the Onion and Garlic for a few minutes if you are adding the Italian sausage do it now and then add the chili seeds, please do not burn, keep the heat low to medium.
Add the Tomato Sauce, Cubed Tomatoes, Paste and salt to taste. Cook on low heat (simmer) for 2 hrs. You can add Olives or Mushrooms if you like.
The stuffed bell peppers
3 bell peppers
1lb. ground beef
1 egg
1 handful of panko or bread crumbs
1 small onion chopped small, not like Chucks his were to big
1 small handful of uncooked rice
garlic power, salt and pepper
Mix it all together and stuff the bell peppers
Place in a pan sprayed with cooking spray
cover with the sauce and bake for about 1 hour.
The easy Potatoes
First I poured the potatoes in the pan, enough potatoes to cover the bottom of my pan. I used very small potatoes.
In a large baggie add the potatoes and 1/4 cup olive oil and one envelope of Lipton Onion Soup Mix, seal baggie and rub it all together. Pour into your pan and add 1 or 2 whole garlic heads with just the tips cut off and drizzle some olive oil on top of the garlic. The garlic is so good squeezed on top of the little potatoes Bake for about 1hr. until browned and tender in the middle. So easy
