Fast Pineapple Upside Down Cake
This Cake takes the Cake in terms of ease. Ok I will admit it and it's ok I used a box cake mix. You have to, I have made this cake so many times from scratch and the box, and you must use the box it holds up under (or over) the pineapple and butter and brown sugar and nuts and cherries. It turns out perfect each and every time I make it. The cake is so fluffy and comforting please make it let me know what you think.

And the cool thing is when you make this cake in a 9 inch pan you get 2 personal cakes just for yourself and, or a friend in 4 inch ramekins. You will have extra batter. I used a 10 inch pan here.

Melt the butter right in the pan, add the pineapple, cherries and nuts.

Sprinkle on the brown sugar.

Add the batter and bake.
1 box cake mix, follow the directions on box. But instead of water I use the pineapple syrup in place of the water. This time I used Vanilla Cake mix because that's all they had in the store here. But sometimes I use just yellow or Pineapple cake mix, if you find it.
1 cube of butter, or 1/2 cup. I use unsalted.
1 large can of Pineapple rounds in light syrup.
1 cup or more, of brown sugar light or dark.

Cherries
Set oven at 350 degrees and spray the pan with cooking spray also. At least the sides
Melt the cube of butter in the pan in oven, add some of the butter to the ramekins to melt too.
Take out of oven when melted and place Pineapple on butter then cherries and pecans
Cover it all with the brown sugar and make sure you get the brown sugar to the edges.
Do the same with the ramekins.
Make cake mix but add the pineapple syrup in place of the water, if you don't have a full cup of syrup add water. Hopefully you find Pineapple in light syrup if not use 1/2 water 1/2 syrup. Pour in pan.
Add some of the cake mix to the ramekins too.
Bake for about 40 minutes, keep an eye on the small cakes they will be done sooner then the big one. Just keep using a toothpick to see when your cake is done. Let cool for about 10 minutes and then place a plate over the cake pan and turn over and gently let the cake fall onto the plate. You will love it!
