Corn Fritters with Aioli Mayo
I love these Corn Fritters you can add what you like, for me it's jalapeño sometimes a little onion or cilantro, anyway you make them they are so good and I love them with an arugula salad. You can dip them in Aioli Mayo or Cilantro Sauce. We used both.


Easy to make Aioli Mayo

Easy Corn Fritters too. Mix and fry in a small amount of oil.



4 Servings
2 egg beaten
1/3 cup flour or a little more if you need it
2 Tablespoons of grated Parmesan
2 garlic cloves mashed with a pinch of salt
1 jalapeño
2 cups of corn kernels
pepper
3 Tablespoons of oil to fry in
Put everything in the food processor and pulse until combined but not to much, about 10 times.
Heat the oil in a fry pan and let it get good and hot and put large Tablespoons of batter carefully into hot
oil. Fry about 3-4 minutes per side and drain on paper towels and sprinkle with salt and try not to eat
every last one, like me.
Aioli Sauce
1/2 cup of mayonnaise
2 cloves of garlic mashed with a pinch of salt
2 teaspoons of Dijon mustard
2 teaspoons of lemon juice
1 teaspoon of olive oil
Combine all the ingredients in a small bowl and let stand
in fridge for at least 1/2 hour
Cilantro Sauce
1 bunch of cleaned Cilantro
pinch of salt
1 garlic clove
squeeze of half a lemon or more
1 jalapeño
1 cup of yogurt or sour cream or 1/2 and 1/2
Put all ingredients in a food processor or blender or even your bullet and whip it all up and enjoy on salad, fish tacos or with Corn Fritters.
