Book Club and Apple Sour Cream Cake

I think this place looks like something out of Arabian Nights, I need to read that book now. This is where we meet for our Book Club I know, beautiful right? It's hard to talk about the book we just read with this view calling my attention. But this is a food blog after all and I want to talk a little bit about the Apple Sour Cream Cake I made to take to the pot luck book club. Ok I'm done let's just look at the view. The cake is very moist because of the apples and sour cream and the topping adds a nice little crunch. Enjoy the view with coffee and Apple Sour Cream Cake.

1/2 cup butter, softened

1 cup sugar

2 eggs at room temp.

1 teaspoon vanilla extract

2 cups flour

1 teaspoon of baking soda

1/2 teaspoon salt

1 cup of sour cream

1 1/2 cups of small diced apple, peel first

For the topping

1/2 cup of packed brown sugar

1/2 cup of chopped pecans

2 Tablespoons soft butter

1 teaspoon cinnamon

In a bowl, cream butter and sugars together. Beat in eggs one at a time and the vanilla. Combine flour,baking soda and salt, add alternately with the sour cram to the creamed mixture. Fold in apples. Spoon into greased 9-in. square pan. In a small bowl mix the topping ingredients sprinkle over batter and bake for 35-40 minutes or until done. Enjoy the view and the cake too.
