Chocolate Pudding Chocolate Chip Cookies
I was wondering what I could do with this chocolate pudding mix I had, I bought it for some other recipe and never used it. So I began to look around and there is all kinds of cookies that use pudding. Who knew, everyone but me I guess. So here is my version, most of the recipes I looked at used vanilla pudding but I had chocolate so in goes the chocolate pudding and out comes these fluffy little chocolate chip cookies that are wonderfully tasty and they look pretty too. I am making these for my little friend hope he likes them.


A behind the scenes look

1 cup unsalted butter at room temp.
3/4 cup of brown sugar
1/4 cup sugar, I used just a little less
1 package instant chocolate pudding the small box, dry
2 eggs at room temp.
1 teaspoon vanilla
pinch of salt
1 teaspoon baking soda
2 1/4 cups of flour
1 1/2 cups of chocolate chips
Preheat the oven to 350 degrees F.
Stir together the flour, baking soda and salt, set aside
In large bowl cream the butter and sugars together
Add the pudding package and beat until blended
Add the eggs one at a time mixing well with each one
Add vanilla mix in
Add the flour mixture slowly just until incorparated
Add chocolate chips and mix in by hand
Place in the refrigerator for 15 minutes
Use parchment paper no need to grease
Roll into 1" balls and slightly press each ball, just a bit
I put some mini chocolate chips on top
Bake for 10 to 12 minutes.
