Cornmeal Waffle with Chorizo and Beef Chile on top


Chorizo and Beef Chile on a Cornmeal Waffle

This sounded strange and so I had to try it with my simple chile and a variation on Paula Deens Waffle which would be good with just syrup or butter and honey, add jalapeños to the waffles too for extra kick just chop them up fine. I used jack cheese on top. I am still using my 43 year old Waffle Maker and I'll be, the thing is still working great after all these years.

The Chili

1 1/2 lb. of ground beef

1 Choritzo sausage with the casing off

1 onion

3 garlic cloves

1 or 2 Jalapeños

1/2 teaspoon Chipotle chili powder or regular chili powder

1 15oz can chopped tomato and juice

1 small can tomato sauce

1 15oz can or half the can, kidney beans

Olive Oil

Chop the onion and chop the garlic and sauté in 1 Tablespoon of olive oil.

Add the ground beef and chorizo sausage and brown the meat.

Add everything else and let cook on low heat for about 1-1/2 hours, but really it tastes best the next day.

Garnish with cilantro, jalapeños, cheese and sour cream if you like.

The Waffle

1 3/4 cups flour

1 1/4 cups yellow cornmeal

1 Tablespoon baking powder

1 teaspoon sugar

1 teaspoon salt

2 cups milk

3 Tablespoons of vegetable oil

2 eggs

1/2 to 1 Jalapeño chopped small

Make sure to preheat your waffle maker and spray with cooking spray

In a large bowl mix the flour, cornmeal, baking powder, sugar and salt. Add the milk, oil, eggs and jalapeño and stir until smooth. Use a 1/2 cup to fill the waffle maker, make in batches keep warn until ready to put the Chili on top
