Fast and Easy Garbanzo Bean Salad with Kalamata Olives and more.
Hot out? This cool and refreshing little salad will help cool you down for lunch or with dinner. Make ahead and let sit in the fridge till your ready to eat. All the flavors can mingle. I could just eat this and a good piece of crusty bread and a glass of wine, dinner is on.



1 can garbanzo beans rinsed and drained
1 cucumber chopped
2 Tablespoons chopped red onion
2 Tablespoons or less of Parsley chopped
1/2 bell pepper chopped
1/2 tomato chopped or a handful of cherry tomatoes cut in half
1 handful of Kalamata Olives with the pit taken out
1 handful of Green Olives without pit
Feta Cheese to crumble on top
2 Tablespoons Olive Oil
1 Tablespoon fresh lemon juice
1 clove of garlic minced
pepper to taste
salt if you like but remember the olives are very salty
Drain and rinse the garbanzo beans and add to your salad bowl
Add all the rest of the veggies
Add all the dressing stuff olive oil lemon juice and garlic
Add the Feta Cheese right before serving and toss gently
