Apple Pecan breakfast bread

Sometimes I want something a little sweet for breakfast but not to sweet and this bread fit the bill. It's got apples and pecans so it's healthy right? I even toasted some of the slices one morning and we both liked it that way too with butter. The first morning I made this bread I had both butter and cream cheese on it, so good.

1/2 cup butter, softened

2/3 cup sugar a little more if you want it sweeter

2 eggs

1/2 teaspoon vanilla extract

2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1/4 cup sour cream

1 cup grated peeled apple or a little more if you want more apple taste. Let the grated apples drain for a bit.

1 cup chopped Pecans

Sugar and cinnamon to sprinkle on top before baking

In large bowl, cream the butter and sugar, add eggs one at a time beating well after each one. Stir in vanilla and combine the flour and baking soda and salt and add alternately with the sour cream, please don't over mix. Stir in apples and nuts sprinkle on some cinnamon and sugar just before baking.

Pour into 9x5 loaf pan, spray with pan and flour a little bit.

Bake at 350 degrees for about 60 minutes or until toothpick comes out clean. Cool for 10 minutes if you can wait. Makes 1 loaf.
