Minestrone Soup
This soup is the kind of soup for me that I just add what I like and still keep with the Minestrone Soup theme.
I start off with olive oil and onion, garlic, carrots, celery. When I am finished it's the Pesto on top that makes this soup
for Chuck and I. We just have to have it on top. It cooks up pretty quick also. Good bread and dinner is served. Now I
need to go and see what bread I can cook up sorta quick. I'll let ya know. Ok so I have this Sourdough Starter in my fridge and every
Tuesday now I have to feed it. I know strange. But before I feed the beast I wanted to use the part I am supposed to throw out, so I
found a recipe that I like and made rather large buns so Chuck could make a sandwich with later.




1 medium onion chopped
3 cloves of garlic minced
2 or 3 carrots chopped
3 or 4 celery stalks with the heart and small leaves, chopped
1 box vegetable stock or chicken 32 oz. unsalted
1 chicken or vegetable bullion cube
3 cups of water
1 potato in cubes
1 or 2 small zucchinis chopped
1can small white beans or green beans
3 or 4 basil leaves chopped
1 small can about 15 oz chopped tomatoes
3 small handfuls of small pasta
4 large leaves of Kale
4 leaves basil
Pesto and Rolls
Sauté the onion,carrots,celery and garlic just until soft. Add the stock, bullion cube, water and bring to a boil over medium heat. Add the potato, zucchini, small white beans,basil, Kale and tomatoes and cook until all veggies are tender. Add salt and pepper to taste and top off with some Pesto.
