Banana Waffles for one or two if you want to share

This Waffle Iron is 44 years old, it's old and funky just like me but it keeps on ticking just like me.
So today I made Banana Waffles for just me because Chuck wanted the leftover Chilaquiles from last night. Although he did have a taste.
I made them with coconut milk and the taste was just fine. I love bananas in my Waffles and Pancakes but I can never make a good Pancake and Waffles are so easy, just pour into the Waffle Iron. So get out that old Waffle Iron if you have one or a new one and make yourself a Waffle.


1/2 cup Flour
pinch of salt
1 1/4 teaspoons baking powder
3 teaspoons sugar
2 eggs
1/2 cup coconut milk or regular milk
5 drops of vanilla extract
1/2 banana mashed
2 Tablespoons melted butter
Combine dry ingredients together in a bowl, In another bowl combine the milk, eggs, melted butter, banana and vanilla
Stir to combine and pour into dry ingredients. Mix just until incorporated. Pour into your hot and oiled old Waffle Iron and cook until golden brown.
Put lots of butter and syrup on top and enjoy your morning.
