Sourdough Sandwiches

I picked this dough because it was an easy and fast one and I needed to use my starter. I had some leftover pasta sauce in the freezer and some Italian Sausage. I roasted some potatoes, onion and garlic while the dough was rising and I will make these for sure again. You can put whatever you like in these and roll em up. You can also make a non meat version just leave out the sausage. I did and I loved it. Chuck loved his too, with Sausage of course.

Sourdough Italian Sausage Rolls, picnic sandwich

For the Dough

3/4 cup water

1 cup sourdough starter

1 Tablespoon olive oil

1 egg room temp.

1 teaspoon sugar

1 1/2 teaspoon salt

3 cups flour

2 1/4 teaspoon yeast

Food Processor Method

Put sourdough starter and dry mixture in food processor bowl with steel blade, while motor is running add the egg and liquid ingredients. Process until mixed. Continue to process until dough forms a ball. Place the dough in a lightly oiled bowl and turn to grease top and cover and let rise until dough has doubled in size about 2 hours.

It ready when you poke it and the hole stays in the dough.

Turn the dough onto a lightly floured surface and punch down to remove air bubbles. Divide into 8 pieces. On a lightly floured surface roll a piece of dough out to a square or as square as you can get it, it doesn't have to be perfect. Spread with some pasta sauce and Italian Sausage, cheese and what ever you like and fold in the top and bottom and fold over the sides and pinch to close, place seam side down on parchment lined cookie sheet and make the rest.

Cut some slits on top with a razor blade, be careful. Drizzle on some olive oil.

Bake in a preheated oven for about 20 minutes or until golden brown.
