Oatmeal Cookies three ways
I love these Oatmeal Cookies
This time I made the regular Oatmeal Pecan and then added in Cranberries in some and chocolate chips in the last batch.
My favorites are the plain with pecans and the cranberry.

At the top are the mini chocolate chips next is the cranberry and then the pecan.
2 sticks unsalted butter, room temperature
1 Cup white sugar
1 Cup packed brown sugar
2 large eggs at room temp,
2 teaspoons pure vanilla
1 1/2 Cups flour
1 teaspoon cinnamon
1 teaspoon baking powder
1 teaspoon salt
3 Cups oats
1 1/2 Cups chopped pecans roasted and then chopped
1/2 cranberries
1/2 chocolate chips
Preheat oven to 350 degrees
Place the pecans on a cookie sheet and bake for about 5 minutes be careful they can burn fast. chop them into corse pieces.
Cream the sugars and butter together until creamy. Mix in egg and vanilla.
Sift the flour, baking powder, cinnamon and salt into the egg mixture. Add oats and nuts. Drop 2 inch rounds of batter onto parchment lined cookie sheet, flatten slightly. Bake for 12 -15 min. or until just a little golden around edges.
After you make some with just the nuts, add the cranberries to part of the batter and chocolate chips to the rest and bake and enjoy.
