Simple Fettuccine with Mushrooms
This is a simple and fast Fettuccine for anytime, Dinner or Lunch. There is no cream in this one so it really is on the lighter side if you don't look at the butter and that's good because I could not stop eating it, and I just had the leftovers for lunch. You can double it for 4 people.
You can see I put the Parmesan in the bowl and that was a bad idea, when I put the noodles in the cheese just clumped together. So don't do what I do and sprinkle it on and stir and add more as you stir.


Sliced Mushrooms about 1 1/2 cups
1/2 Cup Parmesan Cheese grated and more for the top
1/2 lb. Fettuccine
1 cube of butter or 1/2 cup
Pasta water
Slice mushrooms and sauté in about 1 or 2 Tablespoons of the butter for a minute or two.
Put in a large bowl
Grate the cheese and put to the side not in the bowl yet
Put the rest of the butter in the big bowl minus the Tablespoon you used for the mushrooms
Boil noodles to pkg. directions, drain
Add the noodles to bowl and stir in the cheese and add more on each serving, add pasta water as needed to make it all smooth and yummy.
