Sourdough Dipping Bread

I really loved this loaf made in my Carbon Steel Pan, it was the perfect bread for dipping in Spicy Olive Oil that a friend brought to me from Northern California and I topped it with some "everything but the bagel" spices that my son brought to me at the same time from Ca. Love presents that I can't get here in Costa Rica and can use in my cooking. Thanks.

This was the first time I used this pan for bread and it made the bread flatter and perfect for this use. 

3 cups flour, all purpose flour

2 teaspoons salt

1/2 teaspoon dry yeast

1 1/2 cups lukewarm water

Carbon Steel Pan

In a large bowl stir the flour, salt and yeast together add the water and mix it with a fork until the mixture forms a shaggy dough. Do not over work it. You are done no kneading at all. Really.

Cover the bowl with plastic wrap or a cloth napkin and put in a warm place like the microwave for 8 to 24 hours, I did it for 8 hours.

I put the dough on a sheet of parchment paper about hour 6 and let it rest there. I wanted it sorta flat.

After the dough is ready, preheat the oven to 450. Place the pan in the oven to preheat for 30 minutes. 

Carefully take the very hot pan from the oven and lay the parchment paper with the dough on it in the pan, put back in oven for 30 minutes

Brush the top with spicy olive oil  and any spice you like, or whatever you like I just like it spicy.
