Sourdough Parmesan Crust, Quiche


Sourdough Crust and Mushroom Cheese Quiche

Here I go again trying new ways to use my Sourdough Starter and here it is. Quiche in a tart pan. It's cheesy and it has onions, mushrooms and thyme, parmesan is in the crust along with the sourdough. I added Arugula on the top and a few chili flakes for the win. So far we have had it for Breakfast, Lunch and Dinner and I gave some away to friends

This is the butter and the sourdough starter and Parm. I know lots of butter

Just wrap it up and let it chill for a bit

Ready to into the oven

For the Sourdough Crust

1 1/2 cups of all purpose flour

1 teaspoon salt

1 cup unsalted butter, that's 2 sticks, cold

Scant cup of sourdough starter, cold

A small chunk of Parmesan Cheese, about 2 to 3 Tablespoons if grated.

Add flour, salt and parmesan to food processor and pulse to combine

Scatter slices of butter over top of flour and pulse until butter breaks into small chunks

Spread the sourdough starter over the flour and pulse until mixture just starts to come together, stop just before it forms into a ball

Press into a ball and then press flat and wrap in a baggie or plastic wrap and chill for about 1 hour.

For the filling

3 Tablespoons unsalted butter

1 cup chopped onion

1 1/2 cups about of sliced mushrooms

1 Tablespoon fresh thyme, or 1 teaspoon dried and some sprigs for the top just for pretty

3 cloves of garlic finely chopped

salt and pepper to taste

1/2 cup milk

7 eggs

1 cup shredded cheese, what ever you like

Heat the butter in a pan over medium heat and add the onions and cook for about 5 minutes

Add the mushroom and cook for about 5 minutes

Mix in the garlic, thyme and salt and pepper cook for a minute or two at this time add the arugula for a minute and then take off the heat

Preheat the oven to 375 degrees F.

Spray a tart pan or Quiche pan with cooking spray

Combine the eggs, milk and mix.

To assemble the quiche, carefully roll out the dough on a floured board and flour your rolling pin. Roll to 1/4 in thick

Line pan with dough

Add the cheese on top of the dough and then the sautéed mushrooms and onions, pour egg mixture over

Lay the arugula on top and add the chile flakes add some Thyme sprigs too

Bake for 35 to 40 minutes or until golden and the center is set.
