Cinnamon Raisin Bread


I was craving Cinnamon Raisin Toast so I had to make the bread, cool thing is you get 3 nice loafs of bread. Freeze one eat one and give one away if you can. I added just a handful more of raisins to the already great recipe. It has lots of cinnamon and sugar so toasted with lots of butter makes it perfect. For me anyway.

1 and 1/2 cup milk

1 cup warm water temp between 110 and 115 degrees

2 pkg. of active dry yeast

3 eggs

1/2 cup white sugar

1 teaspoon salt

1/2 cup butter

1 cup and a handful raisins, more or less

8 cups flour

2 Tablespoons milk

1 cup sugar

3 Tablespoons of Cinnamon

2 Tablespoons of butter melted for the tops

Warm the milk in a small sauce pan on stove just till you see bubbles forming

Remove from the heat and let cool to lukewarm

Dissolve the yeast in warm water and set aside until frothy, about 10 minutes

Mix in the eggs,sugar,butter and salt and raisins with the yeast mixture.

Stir in the cooled milk slowly, don't want to cook the eggs.

Add the flour and make a stiff dough

Knead the dough on a bit of flour and for a few minutes, I did mine for about 5 minutes. Until smooth.

Place in a large bowl that has been buttered and covered and let rise for about 1 1/2 hours or until doubled in size.

Roll out the dough onto a floured surface and make a large rectangle about 1/2 inch thick

Spread the 2 Tablespoons of milk all over the surface of the dough with your hands

Mix the 1 cup of sugar and 3 Tablespoons of Cinnamon together and sprinkle all over the surface of the dough

Roll up starting at the long end tightly and pinch the seam together

The roll should be 3 inches thick

Cut into 3 pieces and fold the ends under and place in greased pans 9x5

Let rise in warm place for about 1 hour

Bake at 350 degrees for about 45 minutes or until lightly browned and hollow sounding when you tap on them

Let cool on rack and then spread melted butter on tops

After 20 minutes remove from pans
