Potato Flautas
Usually when you buy Flautas at a Mexican Restaurant they are filled with pork and that is just the way Chuck likes them, me on the other hand loves them filled with Potatoes and I do love them seasoned so this recipe is so easy. I used Lipton Onion Soup Mix and roasted the potatoes until crisp and then mashed them just a little bit. Oh and who doesn't like anything fried?
The dipping sauce can be anything you like I just had Yogurt so that is the base. Most of the time I make Guacamole or Salsa. So heat up some oil and make something easy for a snack or to take to a friends house.


1 envelope Lipton Onion Soup mix
3 medium potatoes, cleaned and cubed
1/4 cup Olive Oil
Pepper
1 large chicken breast, sautéed in a little oil until done. Add what you like to season it with
Small flour tortillas, I used 6.
Oil for frying
In a large baggie put potatoes, soup mix and oil and zip up and mix it all up by moving it around.
Spread out on a parchment lined cookie sheet sprinkle on some pepper and bake at 400 degrees until crisp and browned. About 40 miuntes
Using the back of a fork mash the potatoes just a little when they are cool enough
Heat up an inch or two of vegetable oil in a small pan. Large enough to hold 2 rolled up tortillas
Place just a small amount of potatoes off center on the tortilla fold in sides and then roll up and lay seam side down on a plate until ready to use.
Get your oil hot and gently lay two rolled up tortillas in the hot oil and cook until browned on all sides and drain on paper towels.
Yogurt Sauce
about 1/2 cup Yogurt
squeeze of half a lemon
1 or 2 garlic cloves chopped very fine
Jalapeno diced
Mix this all together and let sit in fridge for awhile
