Tomatillo Salsa


Timatillo Salsa

I always make Salsa this way anymore, in the food processor with Cilantro, onion, garlic, can tomato, jalapeño, lemon or lime and now Timatillos. I found for the first time Tomatillos in our market and I was so surprised. My friend told me she had bought them there before so I looked or I should say Chuck looked and he found them so I froze some and left some out to put in my salsa. I love the sorta sourness they add to the salsa. Oh and this time I roasted my veggies first. So good with salty chips and a cold beer.

One bunch of washed Cilanto, through in the food processor

1 can 15oz tomatoes, through in processor. Juice and all

1/2 medium onion, roasted You know how this is going

3 or 4 Tomatillos roasted

2 garlic cloves roasted

1 jalapeno roasted too

pinch of salt add more later if you like

1 small lemon or lime squeezed into processor

Roast the onion, tomatillos, and garlic and jalapeño with a sprinkle of olive oil just until they start to brown, maybe 20 minutes, into the processor.

Blend all the veggies together and have a chip ready to see if it needs more salt or not.
