Zucchini stuffed

If you only have one Zucchini like I did and wanted to make something with it this is it!
1 zucchini sliced down the middle
1 small potato washed
1/2 of a small onion
1 portabella mushroom
salt and pepper
olive oil
spicy hot sesame oil
Parmesan cheese to grate on top
Slice the zucchini down the middle and scoop out most of the meat, leaving a little layer the rest your filling in.
Drizzle some olive oil in each half, and bake on parchment paper at 350 degrees for about 20 - 25 minutes, a little soft to the touch.
Dice up the leftover zucchini, potato, onion and mushroom and sauté a small bit of olive oil until the potato is soft.
Add salt and pepper to taste
In the same pan add the hot sesame oil and a handful of pine nuts and cook and stir until brown
Fill the zucchini half's with the potato mixture and sprinkle on the nuts and parmesan cheese and bake for about 20 minutes, serve. Enjoy
