Pear and Apple upside down loaf cake


First off I ate all the popcorn while making this loaf. Not my first rodeo.

I had 1 pear and 1 apple and needed to make something out of them so I could add my Pear Liquor to. Found this on SweetPhi and only changed it by adding the Pear Liquor. Chuck said you can taste the Liquor, it sure smells good. I will have some later because I am so full from eating all the popcorn that I just popped. Usually I don't bake just for us but here I am doing it. Please someone come and get some. I think it will be great warmed up a bit and add some vanilla ice cream to it. We don't have a fall in Costa Rica just a wet and a dry season, it's now the wet season and I am a California girl and I like fall desserts so this is my excuse for fall desserts. It is kinda cold today like 80 degrees. I know I know.

4 Tablespoons of butter

1/3 cup brown sugar

1 teaspoon fresh grated ginger

1 pear, peeled and cored 1/2 diced and 1/2 sliced

1 apple, peeled and cored 1/2 diced and 1/2 sliced

2 cups flour

1 teaspoon cinnamon

1 teaspoon baking soda

1 teaspoon baking powder

1/2 cup brown sugar

1/2 cup regular sugar

3 eggs

2/3 cup vegetable oil

1 teaspoon vanilla

2 Tablespoon pear liquor

Preheat to 350 degrees

Spray and line a loaf pan with a circle of parchment paper, this works so well in a loaf pan.

In a small saucepan melt the butter the 1/3 cup of brown sugar and grated ginger over medium high eat keep stirring until it is combined and looks like carmel sauce and just starting to bubble on the edges. Remove from heat and add the pear liquor if you have it. If not don't worry.

Pour 1/2 in the loaf pan and lay the slices of apples and pears along the middle of the pan, top with the rest of the sauce.

In large bowl combine flour, cinnamon, baking soda, baking powder, brown sugar and regular sugar, Stir

In a medium bowl add eggs, vegetable oil vanilla and stir in the eggs and 1 Tablespoon of pear liquor until all combined, pour into dry mixture and stir to combine and then add the diced apples and pears.

Pour batter into loaf pan and bake for 40 to 50 minutes or until toothpick comes out almost clean.
