Pumpkin Bites

The crust is sour cream, cream cheese and butter what is not to like?

I have a friendsgiving here in the jungle and we invite about 20 people over and just enjoy each others company. Everyone brings something to add to the dinner and for the last 11 years it turns out to be a great day. So I make a few things like

these little Pumpkin Bites and Rolls and freeze them until the day of the get together it makes my life a little easier on the

day of Thanksgiving.

2 1/2 cups all purpose flour

1/4 cup of sugar

pinch of salt

8oz. of cream cheese

1 cup of butter

2 Tablespoons of sour cream

1/2 cup Pumpkin

1 egg and water to brush on top

Cinnamon and sugar for the top

In a large bowl mix the flour, sugar and salt .

I used the food processor you can do this by hand also.

For food processor put flour, sugar and salt in processor and pulse a few times. Add the cream cheese and butter and pulse a few times.

Add the sour cream and pulse just until it all comes together.

Take the dough out and wrap in plastic wrap and chill for 1hour our more.

Preheat the oven to 350 degrees, line cookie sheet with parchment paper.

Divide the dough into quarters and keep the remaining dough in the fridge while you work with one piece at a time

On floured surface roll the dough into a 10 in square and use a 3 inch cookie cutter and cut out the rounds and lay on parchment paper.

Moisten the edge with water and add a smallish teaspoon of Pumpkin on the circle and fold over and press with fork dipped in flour around edge.

Brush with 1 egg and 1 teaspoon of water mixed together on each half circle and sprinkle on some sugar and or cinnamon.

Bake for about 18 minutes or until a bit golden around the edges.
