Parsley and Basil Salad Dressing






1/2 cup packed fresh parsley
1/2 cup packed fresh basil
1 teaspoon fresh lemon zest
1/2 teaspoon red pepper flakes
1/2 cup olive oil
1 Tablespoon lemon juice
1 clove of garlic
salt and pepper
I just put all this into the bullet like thing I didn't want to get out the food processor for this small amount. This will be just enough dressing for Chuck and I on our salad tonight and maybe some left for tomorrow.
I was at the farm by our home here in Costa Rica and Henry the farm man wanted me to taste his Lemon Basil and it sure did taste like lemon so he gave me some and I added it to with the regular basil and parsley. This is really tasty, just a bit like pesto but thinner and delish. It was very easy and fast to make so give it a try on your salad tonight.
