Peanut Butter Brownies with Peanuts at the beach





My friend Laura gave us some unbelievable Peanuts and they are so good and the best I have ever had, really. So we have been just eating them and I have been trying to make things out of them like my Chocolate Bark with Peanuts and now Brownies to take down to the beach tonight for a beach party. Wait, they are good. A little goo and a little cakey and great peanut butter flavor. I found a recipe on SmittenKitchen and changed things a bit. I used not as much sugar and cut the salt because I put my Molten Sea Salt on top to finish, and the Peanuts are salted also. I used chocolate chips because I didn't have any dark chocolate, witch would have been even better but oh well they are great. I love our beach parties it's just a bunch of us Expats and some young people with children and we all seen to enjoy ourselves to the max.
The Peanut Butter Batter
3/4 cup smooth or chunky peanut butter
A little less than 2/3 cups of granulated sugar, I took out about 2 Tablespoons
1 egg
1 teaspoon vanilla X
A pinch of flaky salt
Brownie Batter
3 ounces of chocolate chips or dark chocolate chips or a great dark candy bar
1/2 cup unsalted butter
1 cup sugar
2 eggs
1 teaspoon vanilla
2/3 cup all purpose flour
Molten Sea Salt if you have it
Handful of salted peanuts
Heat oven to 350 degrees
Line an 8in. baking pan with parchment paper and spray with cooking spray
Make peanut butter batter, mix the ingredients together in a small bowl, set aside
Make the Brownie Batter
In a microwaveable bowl melt the chocolate and butter together until only a few chocolate chips remain, just use 30 second bursts. Be careful not to burn the chocolate. Let cool a few minutes.
Whisk in sugar, then eggs one at a time and vanilla and salt into the chocolate
Stir in flour with a spatula.
Spread a thin layer of the brownie batter in the pan.
Drop the peanut butter batter on top of brownie batter using big spoonfuls
Now drop the rest of the brownie batter next to all the peanut butter batter
Run a knife through all the batter to swirl together.
Sprinkle on handful of peanuts and the Molten Salt
Bake for about 30 minutes or till toothpick comes out almost clean.
