Potato Flauntas

I love these! If you think ahead and make the potatoes it will save some time. I got up very early the other morning because I had potato flauntas on my mind. I was up a 4:20 am and Chuck heard the bedroom door close and he thought a burglar was in the house. It's just me I said and he went back to bed saying something like why in the hell are you up so dam early. I just could't tell him, " oh just making flauntas. Although he definitely knows me by now. 46 years. I usually don't get up that early but I wanted to get the potatoes in the oven so I could give these to a friend who is my yoga teacher and we do yoga at 9:00. You understand right? Anyway I cut the potatoes into little dice and added olive oil, salt, pepper, garlic powder and jalapeno powder, a handful of diced onion and cilantro. Add what you like and roast until tender and a little golden. 35 to 45 minutes.

For these 10 flauntas I used two medium potatoes diced. Remember you will cut them in half.

2 medium potatoes, diced

Salt and Pepper

garlic powder

Jalapeno powder

Handful of cilantro chopped

Handful of diced small onions

Olive oil

Oil for frying

10 or 12 medium flour tortillas

Set oven to 400 degrees

Bake the potatoes for 30 to 40 minutes

Put the diced potatoes on a parchment lined cookie sheet I had to use foil, out of paper

drizzle on some olive oil and add the seasonings

Cook for about 15 to 20 minutes and then add the cilantro and onion. Finish baking

Add a small amount of potatoes to the tortillas and fold in the sides and then roll up and lay flat with the seam side down.

If you let them stay in the cookie sheet for awhile they will not unfold much at all when you fry them.

Use a medium pan and add about 2 inches of oil and heat to high heat.

Lay one or two flauntas in the pan at a time and fry until golden on all sides

Let drain on paper towles

Cut in half

Make a Sourcream or Mayonnaise Sriracha sauce for dipping or Guacamole and Salsa

So good and crunchy!!
