1976 Rice Pudding


This cook book was lost and now it is found, not a great cook, book come on it's for Microwave Cooking for goodness sake. But the Rice Pudding was and is now a 70's favorite. My Mother in law Joann bought us our first Microwave than, and she also bought this cook book so she could cook something from it. She only got to the Rice Pudding and we all loved it. The book has been missing for years and she just recently came across it. So now that Chuck and I are here in California for awhile doing a renovation on our house here I am cookingincalifornia. This is an easy recipe to make and quick too. Next time I might add just a touch more sugar. Coconut milk would work also. This time I did use some vegan milk my niece had because she is dairy free. And it worked!

3 beaten eggs

2 cups milk

1/3 cup sugar

1 teaspoon vanilla

1/2 teaspoon salt

2 cups cooked rice

1/3 cup raisins

cinnamon

In a 2 quart casserole combine eggs, milk, sugar, salt, and vanilla.

Add rice and raisins mix well.

Micro cook uncovered just till thickened 8 to 10 minutes

Stirring every 2 minutes

Sprinkle on Cinnamon

Let set for 30 minutes without stirring. Well I could only wait 15 minutes I like it hot.

Serve with cream it's so good that way.
