Confit Tomatoes


Tomato Confit is so simple and delicious I can’t stop making it. I think you will have a hard time too. Just make it and enjoy the intense flavor. I put my Confit on my sourdough bread that I toasted in the oven.
I used a 9x9 in pan.
Fill with cherry tomatoes that are whole or cut in half.
Add Olive Oil to the middle of the tomatoes
Add 5 garlic cloves chopped very small or grate the garlic onto the tomatoes
Season with salt and pepper and a sprinkle of red chili flakes
Roast at 250 degrees for 2 hours and enjoy warm or cold.
