Lentil Soup with Cilantro Pesto


Sometimes I am just in the mood for a simple soup and this one fits the bill. You don’t need to soak the Lentils over night.

I sautéd one onion chopped 1 large carrot chopped 3 stalks of celery chopped with the middle leaves 2 minced garlic cloves I added 1 can of tomatoes 1 potato cubbed. Add the seasoning you like. Don’t forget the lentils I used 1 cup also 1/2 cup of wine and my home made veggie stock. You can add chicken broth too. Simmer until all is tender. Make or buy pesto so good on top. By the way this is much better the next day. I know this is really not a recipe per say, I want you to try what you like and make it more soupy or thick like a stew. Start with less and add more if you want. That’s the fun of cooking!
